γ-麩胺醯水解酶（英文：Gamma-glutamyl hydrolase）是一種催化以下化學反應的酶^[5]^[6]^[7]^[8]：

γ-麩胺醯鍵的水解

這種溶體或分泌的硫醇依賴性肽酶，在酸性 pH值下最活躍。

在人類中，γ-麩胺醯水解酶由GGH基因編碼。^[7]^[9]^[10]該基因通過去除γ聯聚麩胺酸和麩胺酸來催化葉醯聚-γ-麩胺酸和抗葉醯聚-γ-麩胺酸的水解。^[10]
